To replace carob for cocoa, simply use the same amount of carob. To replace chocolate with carob, use approximately 3 tbs of carob powder for each square of chocolate.
The carob tree ‘Ceratonia Siliqua’ produces carob beans which are 90% pulp, also referred to as kibble, and 10% seed. The kibble is what is used for carob powder and is made up of sugars, tannins and non-starch polysaccharides. The kibble is roasted and ground to make the carob powder.
